Yes, cookie flavored cookies. How magnificent.
This recipe was taking from one of my very favorite blogs, the wood and spoon, here.
I knew I wanted to make this when I saw them. I am a huge cookies and cream milkshake fan and having it in cookies form seemed great. They came out super good to! I would say the best cookies I’ve ever made honestly. It was a lovely thing to do on a Sunday morning.
½ cup (113 gm) unsalted butter, at room temperature (damn room temp again)
¾ cup (150 gm) brown sugar
¾ (150 gm) cup sugar
1-1/2 teaspoons vanilla
2 large eggs
2-1/4 (270 gm) cups all-purpose flour
½ teaspoon salt
1 teaspoon baking soda
1 cup (180 gm) white chocolate chips
2 cups (360 gm) roughly crushed Oreos or chocolate sandwich cookies (Still no food processor, so more fun with a wooden spoon and a plastic baggie)
The coolest thing about this is that I had all the ingredients except the Oreos, which I just picked up at a gas station down the road from my house.
So I preheated the oven to 350 and had a couple baking sheets made up, covered in parchment paper and some baker’s spray. I have three different baking sheets, each a different size. I ended up using all of them twice to get all of my dough baked.
Next to cream together the butter together with the sugar. I don’t have a stand mixer, though word on the street is that I might get one for Christmas. For some reason creaming butter and sugar is really hard for a hand mixer. I feel like I never get the right texture but I was mixing for almost a half hour. I finally just gave up and said, well this will have to do. I cracked the eggs in another bowl and then started adding them, one at a time, mixing each one until smooth. I before hand made a bowl of the flour salt and baking soda combined together, dipped that into the main mixture and mixed for a couple seconds.
At this point I added the white chocolate chips and the Oreo pieces and thought wait I messssed up. The mixture was soo thick, it seemed like there was way too much oreo and white chocolate chips. I folded them in and decided to at least try it.
So I scooped the dough, rolled it a little and placed them on the baking sheets.
And I was so surprised, they came out great!
They were SO GOOD. The best cookies I’ve ever made. I had to play with the baking time a bit, 9 minutes seemed to do it. These were really quick to go from gooey to hard in the oven. My boyfriend took all of them to work and they destroyed them!
Not sure what is next on the baking list, but I will not be baking this weekend. I’m going out of town to visit my friend Jordan in the mountains of Virginia. The weather should be beautiful and I plan to do an 8 mile hike. I’m extremely excited.
